Recipe of the Month:

Apple-Pear Soup

 

32 oz.                   apple sauce
32 oz.                   canned pears with liquid, pureed in blender until smooth
¼ cup                   sugar
1 tsp.                     vanilla
16 oz.                   apple juice
1 stick                  whole cinnamon
 
Put all ingredients in a large pot and bring to a light boil.  Turn down heat to low and simmer for 30 – 45 minutes until flavors have married.
 
To serve:

Heavy whipping cream
Allspice
Cinnamon-sugar blend

Put “soup” into small soup cups.  Drizzle 1 Tablespoon heavy cream over each cup.  Sprinkle with cinnamon-sugar.  Top with 2 turns of grinder containing whole allspice (I put whole allspice into a pepper grinder reserved just for that purpose).

 

Will serve 10 – 12
